Ingredients

  • 500 g cold mashed potatoes
  • 300 g cooked pulled pork, chopped
  • 120 g Gouda or smoked Gouda, grated
  • 2 tbsp Late Checkout
  • 1 tsp Salt Me Daddy, or to taste
  • 1/2 cup gluten-free flour
  • 2 eggs, beaten
  • 1 1/2 cups gluten-free panko or crushed gluten-free cereal crumbs
  • Oil spray or a little avocado oil
  • Strip Tease or Late Checkout for dipping

Method

  1. Mix potatoes, pulled pork, Gouda and Late Checkout. Taste, then season lightly with Salt Me Daddy.
  2. Form into small logs or balls and chill 20 minutes if the mixture is soft.
  3. Coat in flour, then egg, then crumbs.
  4. Air fry at 400°F until crisp and hot through, about 10–14 minutes, turning once, or bake at 425°F until browned.
  5. Serve with Strip Tease or more Late Checkout.
